Do you ever feel like you have a bunch of miscellaneous food leftover in your fridge and you aren’t sure what exactly to do with it? Well that’s how I threw together this incredible tomato cream sauce – in less than 20 minutes! Flavorful, creamy, and easily made using leftovers from the fridge = my kind of dinner!

Ingredients
- 5 minced cloves of garlic
- EVOO
- 2 cups of spinach
- 1/2 jar of your favorite tomato sauce (I’ve used both Rao’s and Publix’s four cheese sauce – both were fantastic!)
- 1 cup of heavy cream
- 2 tablespoons of butter
- 1/2 box of your favorite pasta
- Salt, pepper and parmesan to taste
Instructions
Warm a health pour of EVOO over medium low heat. Make sure the olive oil coats the entire bottom of the pan. Add minced garlic and let it lightly simmer. Make sure the pan is not too hot as you don’t want the garlic to burn, you want it to be a slow simmer to release the garlic flavor into the olive oil!
Add spinach and saute until wilted. Add tomato sauce and let simmer for 5 minutes. Add heavy cream, stir and let simmer for another 5-10 minutes. Depending on how creamy you want the sauce you may need to add some more cream (I usually do). Add butter, salt and pepper to taste. Once pasta is al dente let it finish cooking in the sauce. Top with allllll the parmesan and enjoy!
***If you’re cooking for more than 2 you may need to up to a full jar and 2 cups of cream.
